If you’re looking to get SHREDDED this summer, this low calorie side is for you! This simple side is easy to make. You can make this side to go with a lunch or a dinner because it works well with a variety of entrees.
- 4 small squash
- 4 small zucchini
- 2 tablespoons Parmesan cheese
- * pinch of Himalayan salt and black pepper
First, I wash the 4 squash and 4 zucchini, and then I pat them dry with a clean towel. I then grab my cutting board and the squash and zucchini into nickel slices.
I place them in a microwavable dish and 4 tablespoons of water to the dish. I cover the dish with a microwave safe lid. I microwave them for 3 minutes and then turn them over and give them another 3 minutes in the microwave. The times will vary depending on your microwave.
Once they are soft, I remove them from the microwave. I transfer them to a large glass bowl that is not so hot. I sprinkle the 2 tablespoons of Parmesan cheese over the squash and zucchini.
Next, I add 1/8 teaspoon of Himalayan salt and 1/8 teaspoon of black pepper to the squash and zucchini. Finally I take a fork, combine and serve up onto 4 small glass plates.

You might want to grill these. Wrap the slices of squash and zucchini in tinfoil. Place several tablespoons of water in the foil before sealing. You could also steam them on your stovetop.
