If you’re looking for a last minute dessert that mom will love, look no further. This recipe is simple and easy to make. It not only makes for a great combination; it will satisfy just about anyone’s sweet tooth, including moms! And the almonds give it just a little crunch.
- 1 medium banana
- 2 scoops vanilla ice cream (1 cup)
- ½ cup strawberries, fresh
- ½ cup blueberries, fresh
- ½ cup peaches, fresh
- ¼ cup almonds, sliced
I make this just like you would an ice cream sundae, only with less guilt. I cut a medium banana length wise and place it in a small glass bowl. I top the banana with 2 scoops of vanilla ice cream.
Next, I cut and slice the strawberries and fresh peach; removing the skin from the peach. I place the fruit in a separate glass bowl. I then add ½ cup of fresh blueberries to the bowl and combine the fruit.
Finally I pour the fruit on top of the ice cream. I then top the fresh fruit with ¼ cup sliced almonds.

Beastly Recipe Notes
Try your favorite fruit. I like to select fruit that is fresh and in season. You could also top this with raisins and almonds or pistachios. If you are getting SHREDDED for the summer, you might want to save this for a healthy treat on cheat day!
