Low Carb High Protein: Beastly Chicken and Feta with Toasted Almonds

With summertime fast approaching, everyone’s looking to get shredded! So, I’ve been back in the kitchen coming up with some amazingly delicious healthy recipes that I’ll be sharing in the upcoming weeks. Hope you’re hungry!

Beastly Ingredients

  • 2-5 ounce chicken breasts, boneless and skinless
  • ½ cup fat-free feta cheese, crumbles
  • 4 tablespoons almonds, toasted
  • 1/8 teaspoon Himalayan salt
  • 1/8 teaspoon black pepper, freshly ground

Beastly Directions

This is an easy dish to make. When I make it, I always cook up extra chicken breasts to have on hand. You will also have left over feta cheese that you can use later in the week on other dishes.

First, I preheat the oven to 425 degrees. I grab my large glass baking pan and line it with tinfoil, making sure that I have enough foil to cover and wrap the chicken in.

In a small glass bowl, I combine the ½ cup of feta cheese crumbles and 4 tablespoons of toasted almonds. I set the bowl to the side, and I place the chicken on the tinfoil in the glass baking pan.

Next, I sprinkle the feta cheese crumbles and toasted almonds on top of both chicken breasts. I take the tinfoil and fold it so it covers the chicken breasts.

I place it in the oven for 10-15 minutes. Usually I pull it out at the 10 minute mark to check on it and then depending on how it looks put it back in for the remaining 5 minutes.

After a total of 15 minutes I pull the glass pan out and let it cool. I carefully open up the tinfoil and sprinkle 1/8 teaspoon of both Himalayan salt and black pepper on top of the chicken, before serving.

Beastly Recipe Notes

If you enjoy grilling, you can definitely make this on your grill. You can purchase toasted almonds, but I like to make them ahead of time in the oven. Black walnuts and other nuts work exceptionally well with this recipe too.
