High Protein: Mexican Pizza with Beastly Mozzarella Cheese

There is nothing like getting your morning off to the right start with a hearty breakfast. Don’t be alarmed if this is a little too spicy, you can make it for lunch. Whether you’re shredding for the summer or looking to make gains you can work this recipe into your meal plan.

NB#4 Breakfast-High Protein Mexican Pizza with Mozzarella Cheese

Beastly Ingredients

  • 1 whole egg
  • 1 egg white
  • 1 whole wheat tortilla
  • ½ cup salsa
  • ½ cup onion
  • ¼ cup green bell pepper
  • ¼ cup shredded mozzarella cheese
  • *pinch Himalayan salt and freshly ground black pepper
  • *coconut oil

Before I get started, I preheat the oven to 350 degrees. While the oven is warming up, I lightly coat a round glass baking dish with coconut oil.

Once the glass dish is coated, I lay the whole wheat tortilla in the dish and place it in the oven. I let it bake for 6-8 minutes.

While the tortilla is baking, I grab a small glass bowl and crack 1 whole egg and 1 egg white into the glass bowl. I scramble them together with a wire whisk.

Then, I add just a pinch of Himalayan salt and freshly ground black pepper to the scrambled egg mixture and whisk the mixture one more time.

I set the glass bowl with the egg mixture to the side and grab my cutting board. I chop up ¼ of a green bell pepper and ½ of an onion, making sure to chop them up fairly fine.

Next, I lightly grease a sauté pan with coconut oil and place the finely chopped bell pepper and onions in the sauté pan. On the stove top, I sauté the pepper and onions for 5 minutes.

Now I combine the scrambled egg mixture with the peppers and onions. I let it cook at a low heat for approximately another 5 minutes.

Over the course of the 5 minutes I scramble the eggs with the vegetable mixture. During this time the tortilla has finished baking, and I remove it from the oven to let it cool down before placing the warmed tortilla shell on a large glass plate.

Once the scrambled egg mixture is finished, I remove it from the stove top. I evenly spread ½ cup of salsa on the tortilla. I remove the scrambled egg mixture from the skillet and place it on top of the salsa.

Finally, I sprinkle ¼ cup mozzarella cheese on top of the scrambled egg mixture. I fold the whole wheat tortilla together, so that the warmed tortilla and egg mixture melt the cheese.

Beastly Recipe Notes

You could also add mushrooms and red bell pepper. You might want to add oregano or rosemary for extra flavor. Also consider trying mild, medium, hot or chunky salsa.
