Healthy High Protein Mother’s Day Dinner: Chicken with Asparagus & Fresh Herbs

Every mom loves to be treated to a healthy homemade dinner, and this recipe happens to be one of my mom’s favorites. The fresh herbs and spices really make this a flavorful and memorable meal; your mom’s sure to love it too!

Beastly Ingredients

  • 2 chicken breasts, boneless and skinless
  • 1 cup asparagus
  • ½ cup lemon juice, freshly squeezed
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon basil
  • 1 teaspoon rosemary
  • 1 teaspoon garlic, minced
  • 1/8 teaspoon black pepper

Beastly Instructions

For this recipe I will only be cooking on the stove top. Before I begin, I place the freshly squeezed lemon juice in a large glass bowl. I add the two chicken breasts to the bowl to let them soak in the lemon juice.

Meanwhile, I grab my sauté pan and add 1 teaspoon of extra virgin olive oil to the pan. I heat the oil over medium heat before adding 1 teaspoon of basil, minced garlic, and rosemary and add 1/8 teaspoon of black pepper to the pan.

Once the oil and herbs are heated up, I put the chicken in the sauté pan. I flip the chicken to ensure that it is coated with the herbs and spices. I add the other teaspoon of extra virgin olive oil to the pan.

I cover the sauté pan with the glass lid and let the chicken cook on both sides. While the chicken is still pink, I add 1 cup of asparagus to the sauté pan. I continue to let it cook until the chicken is no longer pink on both sides and the asparagus is tender.

I remove the sauté pan from the stove top and let it cool. I remove the chicken from the pan and place each breast on a large glass plate. I spoon out the asparagus onto each plate and drizzle the remaining oil over the chicken and asparagus.

This also is a very bodybuilding friendly meal. And if you are looking to SHRED this summer, give it a try. If you’re not looking to get shredded, add 1 cup cooked quinoa or a side of rice to go with this meal.
