Gluten Free Easter Sugar Cookies: Chocolate Chips & Powdered Sugar

Your family will absolutely love these delicious gluten free sugar cookies. These cookies are bursting with a buttery flavor. Have fun making and decorating them.

  • Yields: 27-30 cookies
  • Bake time: 7-9 minutes

Beastly Ingredients

  • 2 cups almond flour
  • 1 cup rice flour
  • ¾ teaspoon baking powder gluten free
  • ¼ teaspoon Himalayan Salt
  • 1 cup sugar
  • 1 cup Ghee butter
  • 1 egg cage free
  • 1 tablespoon almond milk

For Decorating

  • ½ -1 cup chocolate chips Enjoy Life, gluten free
  • 1 ½ -2 cups powdered sugar
  • ½ -1 cup almond milk

Beastly Instructions: Part 1

  1. Gently combine baking powder, flour and salt into a mixing bowl.
  2. Set aside.
  3. Crack egg into a small glass bowl, add milk and whisk together.
  4. Warm the Ghee to soften. Place Ghee in a glass bowl and place in a sauce pan with water.
  5. Set aside.
  6. In a large bowl, mix Ghee and sugar. Use a hand held mixer.
  7. Add egg mixture and combine.
  8. Slowly add flour mixture.
  9. Mix thoroughly using a handheld mixer. The dough should pull away from the side of the bowl.
  10. Use your hands; separate the dough into two balls.
  11. Once separated, place each dough ball in cellophane wrap.
  12. Seal tight.
  13. Refrigerate for two hours.

  • For step 11, if you don’t have cellophane you can use wax paper or large zip bags.

Beastly Instructions: Part 2

  1. Remove from refrigerator, pre heat oven to 375 degrees.
  2. Line or spray cookie sheets.
  3. Gently sprinkle flour on bottom sheet of wax paper.
  4. Place one ball between 2 sheets of wax paper.
  5. Roll out the dough. Not too thin.
  6. Remove the top layer of wax paper.
  7. Cut cookies and place on a lined cookie sheet.
  8. Repeat step 4-7 with the second ball of dough.
  9. Preheat the oven to 375 degrees.
  10. Decorate the cookies with chocolate chips before baking.
  11. Bake at 375 for 7-9 minutes.

Beastly Recipe Notes
  • Dipping cookie cutters into a bowl of powdered sugar will prevent the dough from sticking.
  • Use a pie spatula to transfer cookies to baking sheet.
  • Decorate with chocolate chips prior to baking.
  • After cookies are baked create your own frosting; mix powdered sugar and almond milk. Use clean fingers and a spoon to apply frosting.
  • Get creative and have fun decorating the cookies.
