Healthy Homemade: Low Fat Blueberry Cinnamon Muffins

Who doesn’t love muffins from the local bakery? Unfortunately, most muffins from the bakery are highly processed, laden with fat and packed with extra calories. And if you’re trying to lose weight, processed muffins won’t make your scale budge in the right direction.

By making your own baked goods, you can get your scale moving in the right direction! These delicious blueberry muffins will keep your sweet tooth in check and you can indulge without guilt. You’ll be amazed at just how yummy these muffins are; give them a try!

Makes 12 muffins
Bake at 350 degrees
Bake time: 20-25 minutes

Beastly Ingredients

  • 1 cup oat flour
  • 1 cup organic whole wheat flour
  • ½ cup sugar
  • 1 teaspoon Ceylon cinnamon
  • 1 teaspoon baking powder
  • ¼ cup organic honey
  • ½ cup low fat milk
  • 1 teaspoon vanilla flavoring
  • 1 whole egg
  • 2 egg whites
  • 1 cup of organic blueberries


Beastly Recipe Note

To make your own oat flour, take 1 ½ cups of Old Fashioned oats and pulverize it in the blender.

Beastly Instructions

  1. Mix ingredients in a large bowl except the blueberries.
  2. Once ingredients are thoroughly mixed, gently fold in the blueberries.
  3. Lightly grease the muffin tin with almond oil and spoon in the batter.
  4. Bake at 350 degrees for 20-25 minutes.
Beastly Recipe Tip

At the 20 minute mark, poke the muffins with a toothpick. When the toothpick comes out clean, they’re done.
