High Protein Low Carb Egg Spinach Tortilla

This is one of my family’s favorite recipes. We actually call it a Spinach Pie. I don’t mind making it because it is very easy to make and cleanup is a snap.

First I spray a 9 inch round Pyrex dish, and I preheat the oven to 365 degrees. Then I grab a large glass bowl; I crack 3 whole eggs and 6 egg whites into the large glass bowl.

I whisk the eggs together and I add 2 tablespoons of milk to the mixture. Next I add 3 crushed garlic cloves, a dash of pepper and then whisk the mixture until it is a milky consistency. I set this aside.

I proceed to wash and rinse 3 cups of fresh spinach that I pat dry in a towel. I then place 1 large round whole wheat tortilla in the bottom of the glass Pyrex dish. Before I add the spinach, I sprinkle ½ cup of shredded cheese on the tortilla. For today’s recipe I am using a four cheese blend.

After I sprinkle the cheese, I start to layer the spinach pressing it firmly on the tortilla as I go. In a measuring cup I scoop 1 cup of cheese; I continue to layer the cheese and the spinach until it is all gone.

Gently I press the layers down, and then I carefully pour the egg mixture from the glass bowl over the spinach. I press it down gently with a big metal spoon.

Finally I place it in the oven to bake; it takes 32 minutes in my oven. I always poke it in the center with a toothpick to make sure it is done.

This yields 4 servings

Recipe Notes

If you want to make this recipe even lower in carbohydrates; remove the tortilla. You could add cooked chopped bacon to the top of the pie. You can also replace the garlic with onions.
