Spicy Whole Wheat Flank Steak Fajitas for Father’s Day

If you like steak, you will no doubt like this recipe. This steak fajita is not only hot and spicy; it is healthy for you and your taste buds will love it.

This recipe is also very filling, so be prepared to have leftovers. It is great to eat cold the following day too.

In a big freezer ziplock bag, I toss in 1 teaspoon of extra virgin olive oil, 1/8 teaspoon of cinnamon and a dash of pepper. I set the freezer bag aside.

I proceed to cut 6 ounces of flank steak into thin strips; I toss this in my freezer bag. I then cut 1 small onion into thin slices and add that to the freezer bag.

Next I cut 1 red bell pepper in half and then into strips; tossing it into the bag. Then I cut 1 small jalapeno’ pepper into rings; I add this to the bag too. I seal the bag shut and shake all of the ingredients together in the bag.

Finally I dump everything from the bag into a big skillet. I place the skillet on medium-high heat. It usually takes 5-6 minutes to cook. While it is cooking I continually flip the mixture to make sure it is thoroughly done.

I remove it from the skillet and serve it up on 2 medium sized whole wheat tortilla shells. This recipe makes 2 servings.

Recipe Notes
