This salad is quick to make and goes with almost anything. It makes a perfect side for a barbecue or pizza. I usually have all the ingredients on hand, and it only takes about 15 minutes to make.
In a plastic strainer, I thoroughly rinse and wash 2 cups of baby spinach leaves. I pat the spinach dry with a clean towel; it helps absorb the moisture. I place the spinach in a big bowl and then set it aside.
I open a can of sliced beets; I rinse and drain 1 cup worth and add them to the bowl of spinach. Then I grab and rinse 1 medium-sized apple. I chop it up leaving the skin on and toss the chopped apple in to the bowl.
Next I add ¼ cup of chopped walnuts to the bowl. Then I move the bowl out of the way. I grab a small glass bowl.
In the small glass bowl, I whisk together 3 tablespoons of fresh orange juice, 1 tablespoon of organic honey and a dash of black pepper. I pour this mixture into the larger bowl with the spinach. Finally I toss the salad, and then I sprinkle 1 ounce of feta cheese crumbles on top.
